Apple Pie Muffins (Vegan)
This is one of our favorite recipes and one that so many of our friends and family have asked us to do. These muffins do not last long in our house. They are great reheated in the oven and served with ice cream.
If you like Apple pie but hate the mess of carrying it around in your lunch box or coat pocket… this is your solution.

Get ready for the best Apple Pie Muffin ever!
Preheat oven to 350
Start with 2 Vegan Eggs:
– 6 Tbsp of Oat Bev. (or whatever you like)
– 2 Tbsp ground Chia seeds
Stir and set aside for later…
Peel and cut into small pieces 3 Cups of Apples.
Stir in
– 1/2 Tbsp of Lemon juice
– 1/2 Tsp of Cinnamon
set aside.
Combine and mix the following dry ingredients:
– 2 1/2 Cups Flour (we like to sift it)
– 2 1/2 Tbsp Cornstarch
– 1 Cup White Sugar
– 1/2 Cup Brown Sugar
– 2 Tsp Baking Powder
– 1/2 Tsp Salt
– 1 Tsp Cinnamon
Mix in the following:
– 1 Cup Vegan Butter
– 1/2 Cup Oat Bev. (or what ever you like)
– 1 Tsp Vannila
– Add Vegan Egg
Mix in Apples.
The dough will be somewhat thick (somewhere between a cake batter and cookie dough… see video)
Bake for 30 minutes and broil for 1 to 3 minutes until light brown and crispy.
NOTE: If you’re using frozen apples as we often due. We like to pick fresh in the fall and freeze some for winter use. You will need to add a little more flower or forgo the 1/2 cup of Oat Bev.
